The rustic puff pastry with onion jam and cheese is a simple yet refined recipe, perfect as an appetizer, aperitif, or a main dish for brunch or casual dinners. The contrast between the delicate sweetness of the onion jam and the creaminess of the cheese creates a captivating and highly versatile balance of flavors.
Ingredients
For a savory pie for 4-6 people:
- 1 roll of round puff pastry
- 150 g of smoked scamorza cheese
- 120g brie or soft cheese
- 3-4 tablespoons of onion jam
- 50 g diced smoked bacon (optional)
- 30 g of grated Parmesan cheese
- 1 egg
- black pepper to taste.
- a few sprigs of fresh rosemary
Procedure
1. Prepare the base
Unroll the puff pastry and place it on a baking sheet, keeping the parchment paper on it. Prick the bottom lightly with a fork to prevent it from puffing up during baking.
2. Add the cheese
Spread the diced scamorza and the chopped brie over the base, trying to cover the entire surface well.
If you want a more intense and rustic flavor, also add smoked bacon.
3. Add the onion jam
Spoon the onion jam over the quiche. No need to stir: the flavors will meld perfectly during cooking.
Finish with a sprinkling of Parmesan cheese, black pepper, and a few sprigs of fresh rosemary.
4. Close and brush
Fold the edges of the pastry slightly inwards to create a rustic effect.
Brush the edges with beaten egg for a more intense and inviting golden brown.
5. Cooking
Bake in a preheated oven at 190°C (375°F) for about 30-35 minutes, until the pastry is golden and crispy. Let cool for a few minutes before serving.
Tips and variations
This rustic puff pastry can be customized in many ways:
- with gorgonzola for a stronger flavour;
- with crunchy walnuts or hazelnuts;
- with speck instead of bacon;
- in a vegetarian version eliminating the cured meats;
- with goat cheeses for a more delicate flavour.
