A fresh and contemporary panzanella, enriched with a preserves tomatoes, capers and anchovies in oil<\/strong><\/a> which adds flavor and depth. A light yet bold spring dish, perfect as an appetizer or main course.<\/p>

Ingredients (for 2 people)<\/h3>
  • 150 g homemade bread (preferably stale)<\/li>
  • 120 g mozzarella (or burrata for the gourmet version)<\/li>
  • 2 handfuls of rocket or mixed salad<\/li>
  • 2 tablespoons of your preserves (tomatoes, capers, anchovies)<\/li>
  • 1\/2 cucumber<\/li>
  • Red onion (optional, small and thin)<\/li>
  • EVO oil<\/li>
  • Black pepper<\/li>
  • A few basil leaves<\/li><\/ul>

    \u00a0Procedure<\/h3>
    1. Bread<\/strong>
      Cut the bread into cubes and toast it in a pan or oven until it is crispy on the outside and soft on the inside.<\/li>
    2. Fresh base<\/strong>
      In a bowl combine:
      • chopped cherry tomatoes<\/li>
      • sliced cucumber<\/li>
      • salad<\/li>
      • onion (if using)<\/li><\/ul><\/li>
      • Seasoning protagonist<\/strong>
        Add your preserves and mix well: they will provide all the flavour (no salt needed).<\/li>
      • Assembly<\/strong>
        Combine the toasted bread and shredded mozzarella.<\/li>
      • Finish<\/strong>
        • Drizzle of EVO oil<\/li>
        • Black pepper<\/li>
        • Fresh basil<\/li><\/ul><\/li><\/ol>

          Let it rest 5 minutes<\/strong>: the bread absorbs the flavors without losing its crunchiness.<\/p>
